Zinc Tumbukiza is undoubtedly one of our best demonstration of our chefs’ culinary prowess. It is lip smacking rated number one in the greater Nairobi and Kiambu region. It is artfully prepared by placing your preferred chunk of meat (Beef or Goat) in a large sufuria with a sizeable amount of water and allowing it to boil for approximately 30 minutes. It must be fully covered while boiling with fire regulated or at best controlled for perfect results. After 30 minutes, other ingredients are skillfully added in phases preferable starting with onions, tomatoes, cloves of garlic, bunch of ginger and coriander. Salt, paper and royco are also added to your taste. The mixture is allowed to boil for about 10 more minutes. At this point the potatoes (large potatoes) or green bananas are added. Again the mixture is allowed to boil for 10 more minutes. The process is concluded by adding either cabbage or a bunch of spinach and allowed to cook for only 2-3 minutes to avoid overcooking. You have the option of stating what exactly you wish included in your Zinc Tumbukiza. Side dishes may include Ugali, Mukimo – keinyenji, Chapati etc.
